Another few months have passed by and as I am looking out of my window at this beautiful white snow falling down, I think about how blessed we have been this winter with such a mild one, but yes, Mother nature is not done with us yet, especially here in the Adirondacks.

Alot of things have happened this year, some so very sad at the loss of sons and husbands, covid still hanging around, nothing can ever be as devastating as losing a child, and all you can really do is be there for your friends and let them know you care.

I have found that being grateful is such a natural thing in my life, I am grateful for my family, that my children and grandchildren are healthy and happy, that even though my husband has really been put through the ringer, health wise, he is strong and gets through all this pain and operations, he really is my superhero.

This creamy Sausage Tortellini Soup is a 30 minute meal that’s easy to make with sausage, kale, simple seasonings, broth, and cream!

Ingredients

  • 1 pound ground Italian sausagehot or mild
  • 1 small yellow oniondiced
  • 3 cloves garlicminced
  • 3 Tablespoons flour
  • 1 teaspoon dried basil
  • ½ teaspoon oregano
  • ¼ teaspoon pepper
  • ½ teaspoon mustard powder
  • 1 cup heavy cream
  • 5 cups chicken broth
  • 2 cups kalechopped or baby spinach.
  • 2 cups refrigerated tortellinijust under 10 oz.
  • Salt/ to taste

Instructions Note: 

  • Remove the casings from the sausage if you purchased links. Cook and crumble the sausage and diced onions over medium-high heat until the onions are softened and the sausage is cooked through, 8-10 minutes. Drain grease. Add the garlic and cook for 1 minute.
  • Add the flour and cook for 1-2 minutes to remove the raw flour taste.
  • Add basil, oregano, mustard powder.
  • Add the chicken broth and use a silicone spatula to “clean” the bottom of the pot. Slowly stir in the heavy cream. Bring to a boil, reduce to a simmer.
  • Add the kale and tortellini and simmer for 3-5 minutes. (If your tortellini needs longer cooking time, add the tortellini first, then the kale during the last 5 minutes.)
  • Taste the soup and add salt if desired. Start with ¼ tsp and add more after that if needed.
  • Transfer to serving bowls and serve! (This is great with Garlic Bread with Cheese!)
Cook the sausage, onions, and garlic. Add flour and cook for 1-2 minutes. Add basil, oregano, mustard powder. Stir to combine. Add chicken broth and heavy cream. Bring to a boil, reduce to a simmer. Add kale and tortellini. Cook 3-5 minutes. Taste and add salt if desired.  Transfer to serving bowls and add a 
  • For even more flavor, add the rind from a block of Parmesan or Romano cheese when you add the broth and let it simmer and flavor the soup. If any remains at the end of cooking, it can be discarded. Salt will likely not need to be added if you do this.
  • 2-3 cups of Spinach can be used instead of kale, stir it in once the tortellini is cooked and let it wilt, about 30 seconds. If you use frozen spinach, let it thaw and pat it dry prior to adding it.

 Well, here we are another new year "2023" it really has been a tough year for a lot of people, with rising prices and lack of people wanting to work and all these nut cases stealing things right under peoples' noses, what a crazy world it is, but I have hope, not just because I believe in Jesus and his teachings but because I have seen his work his love and his grace. I hope he touches everyone out there with a miracle and a blessing this year.

This post is going to be short and sweet; I have many things to be thankful for, first off, my three girls who have struggled this year, but their strength and faith have seen them through, I wish they could see themselves through my eyes, I am one proud mama. Second my grandchildren are healthy and awesome, my youngest granddaughter BAYLEE GRACE GOT ENGAGED OVER CHRISTMAS TO SEAN (HE IS A PRETY NICE YOUNG MAN) even though I have to admit, Nana did not like him all that much at first, but now I love him, and he is one of our family for sure. Our youngest grandson Dawson has been spending more time with us, I am grateful for that and hope that we get him back soon. All in all, I am blessed with some amazing grandkids.

Where oh Where has the time gone?

 I am not sure where the time goes, is it because I am older now and don't have time for this blog? Probably a little bit of that and a little laziness on my part.

August, September and October have gone by and here we are in November, my busiest month. It holds Thanksgiving, my niece is coming from Colorado to visit and my 51st Anniversary is on Thanksgiving this year, OH such fun.

I have been painting a bit more and also decoupaging, but mostly eating out and playing in the Casinos, yes, I know but you can't take it with you....lol...playing Bunco (a dice game) for all who do not know what it is, with my only remaining sister and her daughters my incredible nieces and Friends' so much fun. Honestly, I have been very lucky this year, but that Lottery eludes me still. 😊

This year has seen a lot of loses family and friends and people I use to go to school with, it also has seen joy too, from my daughter getting better each day from her anxiety to my other daughter losing weight and visits from my daughter Dawn. Getting together with girlfriends from school that I have not seen in years becoming close again is such a blessing.

I am collecting recipes and will share some of my favorites on here for the Holidays, these make ahead recipes are great for gift giving, put in an old-style jar with a cute tag and you have something special for your mail person, a friend, someone who has been especially kind to you or someone who would love a homemade gift, I know they are my favorites.

I hope you have the best Thanksgiving this year has been so hard on us all that remembering what our true blessings are all about, being with the people we love, HAPPY THANKSGIVNG EVERYONE!

 Well, here it is July (my birthday month and I really wish I could make time for this blog more often, shame on me! I have embarked on a new craft area, Decoupage napkins it is so fun and so easy to do, especially when you don't have time to paint on things. I am learning new ways to do items all the time and the groups are fun, competitive because we all sell, but great advice and videos and how too.

I am going to post some pictures here so you can see what you can make with using napkins, I also sell on my page in Facebook. My.... Exchange

I hope everyone is having the best summer, after what we have all gone through with Covid, and now the prices of things. I am heading back to Maine in August for our last vacation of the year, hope you all can get away for a vacation also, hope it is the best summer for all of you.

                 MERRY CHRISTMAS!

I hope everyone has a wonderful Christmas, I also hope this New Year sees the end of Covid and anything else that is thrown at us, we are a quite a resilient bunch us New York Upstaters. I also love the winters here so clean and beautiful, a lot of my friends go South but not me, guess I just will always be an Adirondack girl.

I make these after Christmas they are so yum and let's face it, we all have left over potatoes from the holidays, Hope you enjoy.

To make add just over a little of 1/4 cup of flour, I egg, mix together form patties fry in canola oil and butter .
you can add onions if you like I sautΓ© them first. Enjoy.

 Saratoga and the August place to be, ?

"ummmm yeah! "It is hot and humid and I will be going to Maine in about 5 days, to sit next to the ocean and just allow my mind to be in that magical place of vacation, our last vacation for this year, but at least the majority of my family will be with me and the hubs .

No matter how you feel about politics, today was a very sad day for New Yorkers, some people will disagree and that is absolutely ok, but I think what they did to Cuomo was beyond disgusting, no one deserves to be tried and hung without a word a trial. It has never been done before  and should not become a practice no  matter who you are. ok I have had my say and will pray for him and his family and all New Yorkers. Stay safe everyone, get that shot ,wash those hands ,use the sanitizers but most of all, tell the people in your life how much you love them ,everyday. May God bless each of you.
